Kale, Chicken and Quinoa Power Bowl

Ingredients
- Kale
- 100g chicken breast fillet marinated with spice mixture (e.g. oregano, paprika, turmeric)
- 1/4 cup quinoa
- 1/2 avocado
- 1/2 cup cherry tomatoes, finely chopped
- 1 tbsp seed mixture (e.g. Sunflower seeds (35%), pumpkin seeds (35%), sesame seeds, golden flax seeds)
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
Cooking Method
- Grill the chicken for 6-8 minutes per side.
- Cook the quinoa according to the instructions on the package.
- Assemble the bowl by topping the kale with chicken, quinoa, avocado, cherry tomatoes and seeds.
- Pour the balsamic/olive oil, or any other sauce that is low in sugar and fat, over the salad.
