Salad with wholegrain noodles, smoked salmon and edamame beans

Ingredients
- 100g wholegrain or rice noodles
- 1 tsp sesame oil
- 100g edamame beans (Only Available In-store)
- 1 small red and orange pepper
- Fresh onion, finely chopped
- 1 tsp sesame seeds
- 80g smoked salmon fillet
For the Dressing:
- 1 tbsp rice vinegar
- 2 tbsp low-sodium soy sauce
- Grated ginger or 1/2 tsp ginger powder
- 1 tsp honey
- 2 tsp sesame oil
Method
- Prepare the noodles following the instructions on the package and add sesame oil.
- Rinse the edamame beans in a colander.
- Cut the peppers into small cubes.
- Prepare the dressing by mixing all of the ingredients together.
- Prepare the salad by adding the peppers, edamame beans, and sesame seeds to the noodles. Pour the dressing on top.
