Vegan Lasagne

Ingredients
- 4 tbsp olive oil
- 1 large onion
- 1 medium-sized marrow or courgette, cubed
- 1 red or yellow pepper, cubed
- 250g mushrooms, sliced
- 1 clove garlic (optional)
- ½ cup red lentils
- 2 tinned chopped tomatoes (cans of 300-400g each)
- 2 tsp oregano
- 1 tsp sugar
- 1 vegan vegetable stock
- 150g spinach leaves
- 9-10 egg-free lasagne sheets (depending on the size of the pan)
- Salt
- Pepper
- 3 tbsp olive oil
- 100 g all-purpose flour
- 800 ml unsweetened almond milk
