Ingredients

  • 4 tbsp olive oil
  • 1 large onion
  • 1 medium-sized marrow or courgette, cubed
  • 1 red or yellow pepper, cubed
  • 250g mushrooms, sliced
  • 1 clove garlic (optional)
  • ½ cup red lentils
  • 2 tinned chopped tomatoes (cans of 300-400g each)
  • 2 tsp oregano
  • 1 tsp sugar
  • 1 vegan vegetable stock
  • 150g spinach leaves
  • 9-10 egg-free lasagne sheets (depending on the size of the pan)
  • Salt
  • Pepper
  • 3 tbsp olive oil
  • 100 g all-purpose flour
  • 800 ml unsweetened almond milk
